This small commune in the Aude is sure to have some great culinary experiences in store for you! Among the recipes favoured by its inhabitants, we recommend two convivial dishes that are perfect for sunny lunches during the summer. These are cargolade and the delicious sardinade. The first dish will delight fans of grilled snails, while the second delicately features sardines caught off the Languedoc coast. If you don't have time to eat between two activities, take the time to nibble on a slice of fougasse with fritons, available in all good bakeries. Corbières and the surrounding area boasts a number of fine restaurants that promise to delight. Restaurant menus include veal steak in a black olive crust and pork chop with rind, the equivalent of the traditional pork chop. In summer, it's hard to resist one of the light, fruity rosés grown at the foot of Mont Tauch. The first option for having a good time in the region is hiking. This is particularly popular to the west of Corbières, around the commune of Mirepoix. Explore the rocky paths and marvel at the superb Fontestorbes fountain! If you feel like it, continue exploring and head for the Ariège village of Camon, which has a remarkably well-preserved historical heritage. Just a few minutes from Corbières, there are plenty of activities on offer in Limoux! The Musée des Automates is one of them, and it's getting busier every year. You'll have the chance to admire over a hundred moving figures in the heart of a baroque setting. Children are particularly keen to see the figures of musicians, countesses, noblemen and knights. The Basilica of Notre-Dame de Marceille boasts a nave that is typical of southern Gothic architecture. Its interior features an 18th-century high altar and a chapel housing the Black Madonna. The environment changes radically to the south-west of Corbières, on the site of the Lac de Montbel. Popular with migratory birds, this 570-hectare stretch of water offers a gargantuan playground for water sports enthusiasts. Try your hand at kayaking or pedal-boating, or simply soak up the sun if your holiday is all about lazing around!
If you drive a little further away from all these communes, you'll find a place that's packed with monuments, each more prestigious than the last, just an hour's drive away.
